Breakfast recipes – for an energetic start to the day

Yogurt with berries

125 g yogurt min. 3.5% fat or even better our ActiveBRAVO probiotic for self-fermentation with more than 100 probiotic strains. In addition or mixed in approx. 50 g fresh or frozen berries. Here you can vary between strawberries, raspberries, blueberries, red currants or elderberries or mix them.

Almond pancake with berry mix

Ingredients: 50 g mascarpone, 1 egg, 25 g almond flour, 1 spsp. vanilla pulp, 1 tbsp. coconut oil, 30 g berry mix, fresh or frozen
Preparation: For the batter, whisk together mascarpone, egg and almond flour, cover the bottom of a small pan with coconut oil and fry pancakes in it one by one. Briefly heat the berries in a small pot, mix in the vanilla pulp and spread on the pancakes. If necessary, mix with 1 tablespoon of yogurt, cottage cheese best ActiveBRAVO probiotic.

Scrambled eggs with salmon trout

Ingredients: 2 eggs, 50 g smoked salmon trout, 1 tbsp fresh (or dried) dill tips, 1 tomato, 1 tsp butter, salt, pepper.
Preparation: Beat the eggs with half of the dill and salt and pepper to taste. Melt the butter in a pan and pour in the eggs, let them set and carefully move them from the outer edge of the pan to the center with a wooden spoon until they reach the desired consistency. Cut the tomato into eighths and place on a plate together with salmon trout, add the finished scrambled eggs and garnish with remaining dill.

Tasty recipes for lunch

Herring salad in mustard dressing on a bed of lettuce

Ingredients: 100 g matjeshering, 1 gherkin, half an onion, 50 g arugula, 1 tomato
Preparation: Cut the herring into pieces, the cucumber into slices, the onion into rings, the tomato into cubes and mix everything together; wash the arugula. For the dressing, whisk all the ingredients together (e.g. in a blender) until it has a creamy consistency. Arrange the herring salad on the arugula and spread the dressing over it, wash the dill, pluck it from the stem and spread it over the dressing.

Feta cheese and vegetables packets from the oven (vegetarian)

Ingredients: 200 g feta cheese, 1 tomato, 5 olives, 1 tbsp oil, ½ onion, 1 spring onion, pepper.
Preparation: Drain feta, cut onion, green onion and olives into rings, tomato into cubes. Place feta on a baking paper and cover with tomatoes, olives, onions and spring onions, drizzle with oil and season with pepper. Fold up baking paper on all sides and seal by folding over several times. Bake in preheated oven at 180° for about 20 minutes.

Lamb chop with savoy vegetables

Ingredients: 1 double lamb chop, 20 g bacon cubes, ½ small savoy cabbage, 30 ml broth, 30 ml sour cream, 1 onion, 1 tsp. thyme, salt, pepper, 1 tsp. grated nutmeg, 1 tbsp. oil, 1 tbsp. ghee
Preparation: Wash savoy cabbage and cut into strips. Dice the onion. Leave the ghee in a saucepan and sauté half of the onion cubes until translucent. Add savoy cabbage and when it has collapsed, pour broth and cook until soft. Then chop the savoy cabbage with a hand blender, season with salt, pepper and nutmeg, add sour cream and stir well. Rub lamb chops with oil, season with salt, pepper and thyme. Heat the oil in a grill pan and fry the bacon in it, then add the lamb chops and sear them on both sides, add the remaining onions to the pan after turning the meat and steam them as well.

Colorful salad with coconut-mint dressing (vegan)

Ingredients: Ingredients: 100 g fresh baby spinach, 1 medium tuber cooked beet, 1 carrot, ¼ cucumber, ½ red onion, 5 green grapes, 3 tbsp coconut milk, stalks fresh mint, 1 tbsp lemon juice, 1 tbsp apple cider vinegar, 1 pinch xylitol, salt and pepper, 1 tbsp grated coconut.
Preparation: Cut beet, carrot and cucumber into thin strips, onion into thin rings. Wash and drain spinach, cut grapes in half. Put everything in a bowl. For the dressing, finely chop the mint and mix with the coconut milk, lemon juice, vinegar, xylitol, 2 tablespoons of water, salt and pepper and pour over the salad. Mix everything well again and sprinkle with coconut flakes at the end.

Spinach and tomato frittata (makes 2-3 servings)

Ingredients: 8 eggs, 1 onion, 1 clove of garlic, 100 g fresh spinach, 200 g cherry tomatoes, 15 basil leaves, 100 g feta cheese, 2 tablespoons oil, salt, pepper, nutmeg.
Preparation: Preheat oven to 180°. Finely chop onion and garlic clove, sauté in oil, add tomatoes and simmer for about 5 minutes. Add spinach leaves and basil and simmer for another 5 minutes. In the meantime, whisk eggs with salt, pepper and garlic salt in a bowl, crumble feta cheese and add to egg mixture. Pour the vegetables with the resulting cooking liquid into a shallow greased baking dish and pour the egg mixture with the feta cheese over it and bake in the oven for about 20 minutes.

Celery cutlets with cream cheese and herb dip

Ingredients: 1 medium tuber of celery, 2-3 tbsp coconut oil, 3 tbsp grated coconut, 100 g fresh goat cheese, salt, pepper.
Preparation: Place a heaping tablespoon of fresh goat cheese on each of the 5 slices of bacon and roll up and fry. Peel the celery and cut into slices about 1 cm thick. Pan fry in coconut oil for about 3-4 minutes on each side, then roll in shredded coconut and lightly fry again very briefly on each side. Be careful not to let them get too brown. Mix the goat’s cream cheese with herbs and 1 tablespoon crème fraiche and eat with the celery cutlets.
