Breakfast recipes – for an energetic start to the day

Yogurt with berries

125 g yogurt with at least 3.5% fat, or even better our ActiveBRAVO probiotic for fermenting yourself with more than 100 probiotic strains. Add or mix in approx. 50 g fresh or frozen berries. Here you can vary between strawberries, raspberries, blueberries, red currants, or elderberries, or mix them.

Almond pancakes with mixed berries

Ingredients: 50 g mascarpone, 1 egg, 25 g almond flour, 1 pinch vanilla pulp, 1 tbsp coconut oil, 30 g mixed berries, fresh or frozen
Preparation: For the batter, whisk together the mascarpone, egg, and almond flour, cover the bottom of a small pan with coconut oil, and cook the pancakes one after another. Briefly warm the berries in a small saucepan, mix in the vanilla pulp, and spoon onto the pancakes. If desired, mix with 1 tbsp yogurt, quark, preferably ActiveBRAVO probiotic .

Scrambled eggs with salmon trout

Ingredients: 2 eggs, 50 g smoked salmon trout, 1 tbsp fresh (or dried) dill tips, 1 tomato, 1 tsp butter, salt, pepper
Preparation: Preparation: Whisk the eggs with half of the dill and salt and pepper to taste. Melt butter in a pan and add the eggs, allow them to set, and repeatedly and carefully push them from the outer edge of the pan toward the center with a wooden spoon until they have the desired consistency. Cut the tomato into eighths and place on a plate together with the salmon trout, add the finished scrambled eggs, and garnish with the remaining dill.

Tasty lunch recipes

Herring salad in mustard dressing on a bed of lettuce

Ingredients: 100 g matjes herring, 1 pickled cucumber, half an onion, 50 g arugula, 1 tomato
Preparation: Cut the herring into pieces, the cucumber into slices, the onion into rings, and the tomato into cubes, and mix everything together; wash the arugula. For the dressing, whisk all ingredients together (e.g. in a blender) until it has a creamy consistency. Arrange the herring salad on the arugula and spread the dressing over it, wash the dill, pluck it from the stem, and sprinkle over the dressing.

Feta cheese and vegetable parcels from the oven (vegetarian)

Ingredients: 200 g feta cheese, 1 tomato, 5 olives, 1 tbsp oil, ½ onion, 1 spring onion, pepper
Preparation: Drain the feta, cut the onion, spring onion, and olives into rings, and the tomato into cubes. Place the feta on baking paper and top with tomatoes, olives, onions, and spring onions, drizzle with oil, and season with pepper. Fold up the baking paper from all sides and seal by folding it over several times. Bake in a preheated oven at 180° for approx. 20 minutes.

Lamb chop with savoy cabbage vegetables

Ingredients: 1 double lamb chop, 20 g diced bacon, ½ small head of savoy cabbage, 30 ml broth, 30 ml sour cream, 1 onion, 1 tsp thyme, salt, pepper, 1 pinch grated nutmeg, 1 tbsp oil, 1 tbsp ghee
Preparation: Wash the savoy cabbage and cut into strips. Dice the onion. Melt the ghee in a pot and sauté half of the diced onion in it until translucent. Add the savoy cabbage and, once it has wilted, pour in the broth and cook until soft. Then chop the savoy cabbage a little more with a hand blender, season generously with salt, pepper, and nutmeg, add the sour cream, and stir everything well again. Rub the lamb chops with oil and season with salt, pepper, and thyme. Heat oil in a grill pan and render the bacon in it, then add the lamb chops and sear on both sides; after turning the meat, add the remaining onions to the pan and sauté them as well.

Dinner recipes – your light end to the day

Colorful salad with coconut-mint dressing (vegan)

Ingredients: Ingredients: 100 g fresh baby spinach, 1 medium cooked beetroot, 1 carrot, ¼ cucumber, ½ red onion, 5 green grapes, 3 tbsp coconut milk, stalk of fresh mint, 1 tbsp lemon juice, 1 tbsp apple cider vinegar, 1 pinch xylitol, salt and pepper, 1 tbsp shredded coconut
Preparation: Cut the beetroot, carrot, and cucumber into thin strips, and the onion into thin rings.
Wash and drain the spinach, halve the grapes. Put everything in a bowl. For the dressing, finely chop the mint and mix with the coconut milk, lemon juice, vinegar, xylitol, 2 tbsp water, salt, and pepper, and pour over the salad. Mix everything well again and finally sprinkle shredded coconut on top.

Spinach and tomato frittata (makes 2–3 servings)

Ingredients: 8 eggs, 1 onion, 1 clove of garlic, 100 g fresh spinach,200 g cherry tomatoes, 15 basil leaves, 100 g sheep’s cheese, 2 tbsp oil, salt, pepper, nutmeg
Preparation: Preheat the oven to 180°. Finely chop the onion and garlic clove, sauté in oil, add the tomatoes, and simmer for approx. 5 minutes. Add the leaf spinach and basil and simmer for another 5 minutes. Meanwhile, whisk the eggs with salt, pepper, and garlic salt in a bowl, crumble the sheep’s cheese, and add it to the egg mixture. Put the vegetables with the cooking liquid that has formed into a shallow, greased baking dish, pour the egg mixture with the sheep’s cheese over it, and bake in the oven for approx. 20 minutes.

Celery schnitzel with cream cheese and herb dip

Ingredients: 1 medium-sized celery root, 2-3 tbsp coconut oil, 3 tbsp shredded coconut, 100 g fresh goat cheese, salt, pepper
Preparation: Place one heaped tablespoon of fresh goat cheese on each of the 5 slices of bacon, roll up, and fry. Peel the celery root and cut into slices approx. 1 cm thick. Fry in coconut oil in a pan for about 3–4 minutes on each side, then roll in shredded coconut and fry very briefly again on each side. Be careful that they do not become too brown. Mix the fresh goat cheese with herbs and 1 tbsp Crème fraiche and eat with the celery schnitzels.
